I love this recipe for Cheesy Broccoli and Potato Soup. It is creamy, comforting, and downright delightful. It’s made with broccoli, cheese, and potatoes and is sure to please even the fussiest of eaters. In this recipe, I used vegetable stock, which keeps this recipe vegetarian. However, you can substitute chicken broth if you are not on a vegetarian diet. Grab a bowl a get cozy and enjoy!
Ingredients
- 1 tbsp. olive oil
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 6 c. vegetable stock
- 2 lbs. potatoes, peeled and cut into chunks
- 2 c. cheddar cheese, shredded
- 1 head broccoli, blanched and then cut into bite sized pieces
- Salt and pepper to taste
Instructions
- In a large sauce pot, heat olive oil over medium heat. Sauté onions until translucent.
- Add garlic and cook for one minute more. Add vegetable stock and potatoes. Increase heat to medium high and bring to a boil. Cook until potatoes begin to fall apart.
- Using immersion blender, blend all ingredients until smooth. Lower heat to medium. Add cheese and stir until incorporated.
- Add broccoli and cook for ten more minutes or until broccoli is at desired tenderness. Salt and pepper to taste. Serve hot.
